1 lb green mussels
1 lb clams
1/2 lb fish fillets (such as cod or halibut)
1 lb shrimp, peeled and deveined
2 medium potatoes, diced
1 cup leeks, chopped
1 cup clam juice
1 can (28 oz) crushed tomatoes
1/4 cup olive oil
2 tablespoons butter
1 teaspoon sea salt
2 bay leaves
1 teaspoon crushed red pepper
1 teaspoon peppercorns
1/4 teaspoon saffron
1/2 cup white wine

Chop up onions, leeks, and potatoes.

Heat a pot and add a couple of tablespoons of olive oil.

Sauté onions until they are clear, not browned.

Add chopped leeks and potatoes to the pot.

Season the potatoes with sea salt, bay leaves, crushed red pepper, and a pinch of saffron.

Add butter to the pot and let it cook for a little bit.
