1 teaspoon Italian seasoning
4 cups fish stock

Heat 3 tablespoons of olive oil and 3 tablespoons of butter in a pot.

Add 2 chopped medium onions to the pot and sauté until translucent.

Add 2 cups of chopped tomatoes and 2 teaspoons of tomato paste to the pot, stirring to combine.

Pour in 1/2 cup of white vermouth and let it deglaze the pan.

Add 3 smashed cloves of garlic, 2 bay leaves, 1/8 teaspoon of Italian red pepper, 1 teaspoon of salt, 1/2 teaspoon of cracked black pepper, and 1 teaspoon of Italian seasoning to the pot.

Pour in 4 cups of fish stock and bring to a simmer.

Prepare the shrimp by cleaning them, leaving the tails on for flavor, and saving the shells for broth.

Add the shrimp, scallops, and halibut to the pot and cook until the seafood is done.
