Brown rice flour adds fiber, while all-purpose flour is more economical.
Prepare the dough by mixing 1 kilogram of glutinous rice flour with 2 liters of water, using a mix of warm and boiling water to achieve the right consistency.
Add 200 grams of sugar to the mixture and a pinch of salt, then mix well until smooth.
Knead the dough until it becomes elastic, about 5 minutes.
Divide the dough into small balls, approximately the size of a golf ball.
Flatten each ball into a disc and place a spoonful of grated coconut in the center.
Fold the dough over the filling to create a half-moon shape, sealing the edges tightly.
Cut banana leaves into squares and lightly steam them.
Place each dumpling on a banana leaf square and fold the leaf over to wrap it.
Arrange the wrapped dumplings in a steamer basket.
Steam the dumplings for about 15-20 minutes until they are cooked through and slightly translucent.
Remove the dumplings from the steamer and let them cool for a few minutes.
