Button Mushrooms – 200 gms, diced
Capsicum – ½
Green Chilies – 2, sliced
Bay leaf - 1
Onion – 2, medium, sliced
Ginger and Garlic paste – 1 tbsp
Cumin Powder – ½ tsp
Coriander Powder – ½ tsp
Tomato – 1 medium-sized, sliced
Salt – 1 tsp or as per your taste
Turmeric Powder – ½ tsp
Red Chili Powder – ¼ tsp or as per your taste
Kashmiri Red Chili Powder – ¼ tsp or as per your choice
Cashew Nuts – 3 to 4, pre-soaked
Almonds – 3 to 4, pre-soaked and peeled
Melon Seeds – 1 tbsp, pre-soaked
Coriander Leaves – a few, chopped
Ghee – 1 tsp or Unsalted Butter – 1-inch cube
Fresh Cream – 2 tbsp
Sugar – 1 tsp or as per your taste
Water – a little
Cooking Oil - 2 tbsp

Prepare the Shahi Masala by grinding the cinnamon sticks, black cardamom, cloves, star anise, nutmeg, green cardamom, mace, black peppercorns, small cumin seeds, and cumin seeds together.

In a pan, heat cooking oil and ghee (or unsalted butter) over medium heat.

Add the bay leaf and sliced onions; sauté until golden brown.

Stir in ginger and garlic paste; cook until aromatic.

Add diced button mushrooms and capsicum; sauté until mushrooms are tender.

Add sliced green chilies, tomato, cumin powder, coriander powder, turmeric powder, red chili powder, Kashmiri red chili powder, and salt; mix well and cook for a few minutes.

In a blender, combine pre-soaked cashew nuts, almonds, and melon seeds with a little water to make a smooth paste.

Add the nut paste to the pan and mix well; cook for a few more minutes.

Stir in fresh cream and adjust seasoning with sugar and additional salt if needed.

Garnish with chopped coriander leaves before serving.
