Strain the egg yolks through a sieve to produce a fine powdery texture.

Press the yolks through the sieve using a spoon, adding one yolk at a time.

Remove any clumps that do not pass through the sieve.

Add 1 tablespoon of rice vinegar to the strained yolks.

Add 1 tablespoon of lemon juice to the mixture.

Add a good dollop of Dijon mustard (about 1 tablespoon).

Whisk the mixture until well combined and wet.

Slowly pour in the olive oil in small increments while whisking continuously.

Continue whisking until the mixture becomes creamy and silky, which may take time as the emulsification process is trickier than with raw eggs.

Season the mayonnaise with salt to taste before serving.
