Wild Alaskan Sockeye Salmon

4 (6 oz) wild Alaskan sockeye salmon fillets
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 lemon, sliced
1 tbsp fresh dill, chopped
1 tbsp fresh parsley, chopped

Prepare the smoker by firing up the Yoder Loaded Wichita smoker.

Set the smoker temperature to around 300 degrees Fahrenheit.

Rub the sockeye salmon with a drizzle of olive oil.

Sprinkle ground pepper over the salmon.

Crush pink himalayan salted pork rinds and sprinkle them on top of the salmon.

Top the salmon with parsley for garnish.

Slice lemons thinly and place them on top of the salmon, squeezing some lemon juice over it as well.

Massage the lemon juice into the salmon.

Place the salmon skin side down on the smoker.

Monitor the smoker temperature and add hickory wood every 15 minutes to maintain 300 degrees.

Cook the salmon until it reaches an internal temperature of about 130 degrees Fahrenheit.
