Slice the Buddha's hand into small bite-sized pieces.

Boil the sliced Buddha's hand in water for 30 minutes or until tender.

Drain the boiled Buddha's hand pieces.

In a pot, combine 2.5 cups of granulated sugar and 2 cups of water.

Simmer the sugar and water mixture until it reaches 230°F (110°C).

Remove the syrup from heat and drain it, saving the syrup.

Spread the drained Buddha's hand pieces on a rack to dry.

After 24 hours, toss the dried pieces in the remaining 0.5 cup of sugar until well coated.

Allow the coated pieces to dry for a couple more hours until crystallized.
