Soak 1 pav in water for 10 minutes and squeeze out excess water.

In a mixing bowl, combine 250 grams minced mutton with 1 teaspoon ginger-garlic paste, 1 teaspoon salt, 2 chopped green chilies, 1 tablespoon coriander, 1 tablespoon garam masala powder, 0.5 teaspoon red chili powder, 0.5 teaspoon cumin powder, 0.5 teaspoon chili flakes, 1 tablespoon roasted gram flour, some chopped mint leaves, and some chopped coriander leaves.

Add the soaked pav, 1 egg, and 1 teaspoon lemon juice to the mixture.

Mix everything thoroughly for 3-4 minutes until well combined.

Marinate the mixture in the fridge for 1 hour.

Prepare a green chutney by grinding together half a cup of mint, half a cup of coriander, 1 teaspoon tamarind, 3 green chilies, and 2 garlic cloves with some water.

Heat a large tava (griddle) and shape the meat mixture into flat patties.

Fry the patties in hot oil on medium to high flame for 3-4 minutes until golden brown, flipping them halfway through.

Once cooked, drain the patties on the sides of the tava to make them crispy.
