In a pan over medium heat, heat oil. Add onion and garlic. Cook until softened.

Add ground pork. Cook until lightly browned. Season with salt and pepper to taste.

Add bell peppers and cook for about 1 minute. Remove from heat and set aside.

With a fork, prick eggplants. Arrange eggplants in a single layer directly on a gas stovetop over high flame. Roast, rotating occasionally with tongs, until slightly softened and the skin is charred.

Remove from heat and allow it to cool to the touch. Peel the skin and gently rinse under cold, running water to remove stray skin.

Flatten the eggplants with the back of a fork, leaving the stems intact. Set aside.

Heat about 1/4 cup oil in a wide pan.

In a bowl, add eggs and salt and pepper to taste. Beat until foamy.

Holding by the stem, dip the eggplant in the eggs. Quickly slide into the pan.

Add pork mixture on top, flattening with spoon. Pour about 2 tablespoons of beaten egg to cover the pork mixture.

Carefully flip the eggplant. Cook for about 2 to 3 minutes.
