3 Cardamoms
3 Bay Leaves
1 Cinnamon Stick
4 Medium Onions
4 Medium Tomatoes
5 Cloves chopped Garlic
2 inches Chopped Ginger
2 Tsp Cumin Seeds
1 Tsp Turmeric
4 Tsp Coriander Powder
3 Tsp Kashmiri Chilli Powder
1 Tsp Garam Masala
Handful of fresh coriander
1 Tsp dried Fenugreek Leaves (Kasuri Methi)
3 Tbsp Ghee
3 Tbsp Sunflower Oil
Salt to taste
2 Cups washed rice (pre-soaked for 15 mins)
3 Tbsp Ghee (for rice)
3 Tsp Cumin Seeds (Jeera) (for rice)

Add beans into pressure cooker and fill with water, do not over-fill.

Add Cardamoms, Bay leaves, Cinnamon stick and salt, mix well; cover and cook for 4 whistles, then reduce heat to low and cook for 10 mins.

If not using a pressure cooker, cook in a pot for approximately 40 minutes until beans are mushy.

In a pre-heated pan, add oil and fry onions for 7 minutes until soft.

Add tomatoes and cook covered for another 5 minutes until tomatoes start melting.

Blend cooked tomatoes & onions with a bit of water into a puree.

In a pre-heated pan, add ghee, once hot, add cumin seeds and let them crackle.

Add ginger & garlic, mix for a few seconds.

Lower heat and add the tomato/onion puree, mix well.

Add prepared beans with all its water into the pan with gravy, cook on low heat covered for 5 minutes.

Add garam masala, chopped coriander, and fenugreek leaves, mix for 3 minutes.

For Jeera Rice, wash rice until water is clear and soak for 15 minutes.

Boil water, then add salt and ghee, followed by the rice; boil for 7-8 minutes until 80% cooked.

Drain rice and rinse with cold water to prevent further cooking; spread on a flat plate to cool.

In a heated pan, add ghee, once hot, add cumin seeds and let them crackle.

Add rice and fry while mixing gently for 3-5 minutes.
