Incorporate the egg, chopped parsley, salt, black pepper, and any desired spices.
Mix until well combined and form into small balls.
Place the veggie balls on a baking sheet lined with parchment paper.
Drizzle with olive oil or spray with cooking spray.
Bake for 25-30 minutes, turning halfway, until golden brown.
Alternatively, heat oil in a pan and fry the balls until crispy and browned.
Remove from heat and let cool slightly before serving.
