1

Add 250g of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of turmeric powder into a high-speed blender.

2

Pour in 200ml of thick coconut milk or cream, 3 tablespoons of vegetable oil, and 375ml of plain water.

3

Blend the ingredients until smooth to create the batter for roti jala.

4

Pour the batter into a roti jala bottle or a regular sauce bottle.

5

Heat a non-stick pan and lightly oil it using a brush or paper towel.

6

Once heated, lower the heat and start from the outside, drawing overlapping circles with the batter.

7

Cook until the roti jala changes color and can be separated easily from the pan, then slide it onto a plate.

8

Fold the sides of the roti jala to create a rectangle and roll it up into a log.

9

Finish cooking the remaining batter, stacking the roti jala on top of each other to keep them soft.

10

In a pot, heat some oil and add 1 cinnamon stick, 1 star anise, 4 cloves, and 4 cardamom pods until fragrant.

11

Add 2 thinly sliced red onions and sauté for 30 seconds.

12

Add 4 slices of ginger and 5 cloves of thinly sliced garlic, along with 3 stalks of fresh curry leaves, and stir until lightly caramelized.

13

Add 80g of curry powder and some water to help it along, cooking until it dries down.

14

Toss in potatoes and carrots, then add 4 cups of water and season with salt and optional mushroom seasoning or veggie stock.

15

Close the lid and simmer for 15 minutes or until the potatoes are fork tender.

16

Add 1 head of broccoli florets and a handful of chopped green beans, mixing everything together.

17

Add 1 cup of crispy roasted tofu, 100ml of coconut milk, and 1 asam keping or tamarind slice, then give everything one last mix and simmer.

18

Scoop into a bowl and serve with the roti jala.
