Peel the skin off the pumpkin and chop it into smaller pieces.
Grate the pumpkin using a box grater with the finest grating surface.
Heat a pan and add 1 teaspoon coconut oil.
Add a few mustard seeds and curry leaves to the oil and let them splatter.
Add the grated pumpkin and a pinch of salt to the pan and cook for 3 to 4 minutes until wilted.
Remove the cooked pumpkin into a bowl.
In another bowl, add 4 to 5 tablespoons of thick curd.
Add 1 teaspoon roasted cumin powder, 1/2 teaspoon sugar, and whisk the curd into a smooth texture.
Add the cooked pumpkin mixture to the curd and mix everything together.
