Instructions

  1. 1Heat oil in a pan over medium heat.
  2. 2Add cumin seeds and let them splutter.
  3. 3Add chopped onions and green chilies, sauté until onions are golden brown.
  4. 4Stir in ginger-garlic paste and cook for a minute until fragrant.
  5. 5Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft.
  6. 6Once the mixture is well combined, make small wells in the mixture and crack the eggs into them.
  7. 7Cover the pan and cook until the eggs are set to your liking.
  8. 8Sprinkle garam masala over the top and garnish with fresh coriander leaves.
  9. 9Serve hot with roti or rice.
