Start by making a sourdough sponge with 1 cup sourdough starter, 1 cup milk, and 1 cup flour. Mix until well combined and let it sit covered for 2-3 hours to ferment.

Prepare the cocoa wafer cookie dough by creaming together 11 tablespoons unsalted butter and 2/3 cup granulated sugar until fluffy.

In a separate bowl, combine 1.5 cups all-purpose flour, 1/2 cup cocoa powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Mix well.

Add the dry ingredients to the butter and sugar mixture along with 1 teaspoon vanilla extract and 1 large egg yolk. Mix until combined, scraping down the sides as needed.
