Green Beans with Roasted Nuts and Cranberries

1 lb fresh green beans, trimmed
1/2 cup mixed nuts (almonds, walnuts, pecans)
1/2 cup dried cranberries

Preheat the oven to 350°F (175°C).

Spread the mixed nuts on a baking sheet and roast in the oven for about 10 minutes, or until golden and fragrant. Remove and let cool.

In a large pot, bring water to a boil and add the green beans. Blanch for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to stop the cooking process.

In a large mixing bowl, combine the blanched green beans, roasted nuts, and dried cranberries.

Drizzle with olive oil and season with salt, black pepper, garlic powder, and red pepper flakes (if using). Toss to combine all ingredients evenly.
