Pick vibrant green green beans that snap when bent.
Trim the ends of the green beans using a paring knife.
Grab a large pot and fill it with water, then bring it to a boil.
Add a heavy hand of salt to the boiling water.
Add the green beans to the boiling water and cook until just barely tender, still slightly crisp.
Once tender, immediately transfer the green beans to an ice water bath to stop the cooking process.
For storage, place the green beans in a freezer bag with folded paper towels, squeeze out the air, and zip it closed.
Prepare a vinaigrette using shallots, ginger, red wine vinegar, a mix of grapeseed oil and olive oil, a dash of honey or sugar, salt, and pepper. Optionally add mustard and shake to combine.
