Mashed Potato with Carrots and Onion

50g carrot

30g parmesan cheese
10g parsley

300g cucumber
1 tsp salt
2 tbsp sour cream
1 tbsp mayonnaise
8g dill
2 cloves of garlic
1 tbsp soy sauce
1/2 tsp rice vinegar
1/2 tsp white sugar
1/2 tsp sesame oil
1 tsp ginger
1 tbsp white sesame seeds

Dice the potato.

Place in a pot with water.

Cook for 15 minutes on medium-high heat.

Drain the water.

Mash the potatoes.

Slice the onion.

Shred the carrot.

In a pan, heat olive oil over medium heat and cook the onion for 2 minutes.

Add the shredded carrot and cook for 3-5 minutes.

Add the cooked onion and carrot to the mashed potato and mix well.

In a bowl, combine 1 egg, 2 tbsp flour, 30g parmesan cheese, 10g parsley, salt, black pepper, and paprika. Mix well.

Scoop some potato mixture and shape it into a ball. Coat in bread crumbs.

In a pan, heat vegetable oil and place the patties. Fry for 3-5 minutes until golden brown.

Thinly slice the cucumber and sprinkle with 1 tsp salt. Let sit for at least 10 minutes.

Flip over and fry the patties for another 3 minutes.

Prepare a sauce by mixing 2 tbsp sour cream, 1 tbsp mayonnaise, 8g dill, and 2 cloves of garlic. Squeeze out the excess liquid from the cucumbers after 10 minutes.

In a bowl, mix 1 tbsp soy sauce, 1/2 tsp rice vinegar, 1/2 tsp white sugar, 1/2 tsp sesame oil, a pinch of salt, and diced ginger.

Roast 1 tsp ginger and 1 tbsp white sesame seeds on low heat for 3-5 minutes and add to the cucumbers. Mix well.
