Tepache

Cultural Context

Tepache is a traditional Mexican beverage made from fermented pineapple. It is often enjoyed as a refreshing drink, especially during hot weather. The fermentation process gives it a slightly tangy flavor, and it is commonly served chilled. Tepache has roots in indigenous Mexican culture and has been enjoyed for centuries, often made at home and served at gatherings and celebrations.

1

Cut the top and bottom off the pineapple.

2

Cut all the way around the pineapple to remove the rind.

3

Remove the tough woody center of the pineapple.

4

Cut the pineapple into quarters and remove the woody part from each quarter.

5

Cut the pineapple into triangle shapes and then slice into chunks.

6

Place all the pineapple rind and chunks into a large jar.

7

Add 1 dried chipotle and a cinnamon stick to the jar.

8

Add 1 cup of brown sugar to the jar.

9

Fill the jar with water until the pineapple is fully submerged.

10

Seal the jar with a plastic lid, but do not seal it tightly to allow gas to escape.

11

Shake the jar to dissolve the sugar and activate the bacteria.

12

Press down the pineapple pieces to ensure they are submerged under the liquid.

13

Store the jar in a pantry for 3-5 days, depending on the temperature of your home.

14

After 5 days, check for bubbles and foam on top as a sign of fermentation.

15

Scrape off any dirt or foam from the top before pouring the liquid into a glass.
