Tepache

Cultural Context

Tepache is a traditional Mexican beverage made from fermented pineapple. It is often enjoyed as a refreshing drink, especially during hot weather. The fermentation process gives it a slightly tangy flavor, and it is commonly served chilled. Tepache has roots in indigenous Mexican culture and has been enjoyed for centuries, often made at home and served at gatherings and celebrations.

Sourdough starter can add more flavor.

1

Cut off the top of the pineapple.

2

Slice off the peel from around the perimeter of the pineapple, saving the pineapple to eat later.

3

Toss the core into compost.

4

Add 1 cup of piloncillo (or brown sugar) to the peels.

5

Add cinnamon sticks (or cloves) as desired.

6

Top up with water and shake the mixture.

7

Cover the fermenter with a kitchen towel or napkin and secure it with a rubber band.

8

Let it sit at room temperature, out of direct light, for 3-5 days.

9

Check daily to taste; ferment less for sweetness, more for funkiness.

10

Scoop out any foam if desired, but it's not necessary.

11

After 3-5 days, strain out the rinds and spices to bottle the liquid.

12

Use swing top bottles or kombucha bottles for bottling.

13

Let the bottles sit on the counter for 1-2 weeks to carbonate.

14

After 1-2 weeks, refrigerate for a few hours before drinking.
