1 pound honey

Weigh out 1 pound of honey and put it into the fermenter.

Cut the tops and bottoms off of each pineapple and cut them into thin rings, including the skins, and add them to the fermenter.

Crush 1 pound of piloncillo in a Ziploc bag using a hammer and add it to the fermenter.

Add water to the fermenter until it reaches 2.25 gallons and give it a gentle shake to mix.

Add white wine yeast to the mixture and shake it up before putting it away for two weeks.

After two weeks, rack the mixture into a secondary container, filling from the bottom up to minimize oxygen exposure.

Add 7/8 cup of erythritol to both one-gallon jugs and stir to mix.

Let the jugs sit for a couple of days to allow the erythritol to dissolve.

Add a dried hot pepper to one of the batches for spice, if desired.

Bottle the mixture using carbonation drops for carbonation, ensuring to mix thoroughly before bottling.

Let the bottles condition for two to three weeks to carbonate.
