Choose a ripe pineapple, which should be yellow and have easily removable leaves from the center.

Remove the top of the pineapple and cut it into large chunks, including the skin.

Use 2 kg of pineapple for the recipe.

Use 2 kg of piloncillo, avoiding darker piloncillo to keep the tepache visually appealing.

Add the piloncillo to a large container (barrel) with the pineapple.

Fill the container with water until it reaches a total of 10 liters.
