Put warm filtered water in a cup and add 1 cup of brown sugar, stirring until dissolved.

Pour the dissolved brown sugar and water solution into a half gallon size mason jar.

Add 1 cinnamon stick and 3 whole cloves to the jar.

Rinse the pineapple well, then cut off the top and bottom.

Cut off the rind, leaving about a half inch of fruit attached to the rind, discarding any bad spots.

Quarter the pineapple lengthwise and remove the core by cutting the corners of each quarter.

Cover the jar with a tea towel and let it sit at room temperature for 24 to 48 hours.
