Chop off the bottom part of the pineapple and roughly chop the skin off.

Place the pineapple chunks in a pre-washed jar.

Remove the stalky part of the pineapple and add it to the jar.

Add a good chunk of pineapple for good luck.

Add 150 grams of brown sugar or a pilloncy yukon villancillo if available.

Add a large stick of cinnamon, sliced orange, cloves, and a knob of crushed ginger to the jar.

Fill the jar halfway with filtered water and shake to mix everything up.

Fill the jar to the top, leaving a small gap for carbonation, and shake again.

Loosely fasten the top of the jar and secure it with three small elastic bands to allow gas to escape.

Leave the jar in a dark place at room temperature for 3-5 days, checking daily and mixing to prevent mold.

Use a bowl to hold the pineapple under the water surface and allow gas to escape.

After fermentation, pour the mixture through a sieve into thicker glass bottles with stoppers.

Leave the bottles in a dark place for two more days before refrigerating them.

Cool the bottles in the fridge before opening to control carbonation.
