Pat out 2.5 lb of ground beef to ensure good contact with the pot.
Season the beef with 'meat Magic' and place it in a pot with some oil to cook until it blackens.
Add 4 cups of water to the pot and let it boil for about 5 minutes.
Chop smoked sausage into cubes and brown it in the pot after the beef.
Add chopped onion, green bell pepper, red bell pepper, and celery to the pot with the sausage.
Cook the vegetables down until softened, scraping the bottom of the pot to incorporate flavors.
Prepare a roux by adding 3-4 tablespoons of corn flour to the pot, cooking until it turns a light chocolate color.
Add chili powder and cumin to the roux and toast for a minute.
Incorporate tomato paste and Louisiana hot sauce into the mixture, stirring well.
Add the chopped jalapenos to the pot, ensuring to remove seeds for less heat.
Let the chili simmer for about 30 minutes, adjusting seasoning with salt and cayenne pepper as needed.
Cover the pot and let it simmer for an additional 25 minutes, checking for desired thickness and flavor.
