Cedar-Planked Salmon

4 salmon fillets (6 oz each) wild sockeye salmon
1 large cedar plank (soaked in water for at least 1 hour) Weber Cedar Planks
1 tsp salt salt
1/2 tsp black pepper pepper
1 lemon (sliced, for garnish) sliced lemons
1 tbsp fresh dill (chopped) dill

Soak the cedar plank in water for at least an hour before grilling.

Prep the kettle for indirect medium heat by pushing coals to both sides of the grill and leaving the middle clear.

Keep a spray bottle of water nearby in case the plank catches fire.

Place the salmon fillet on the soaked plank.

Season the salmon with salt and pepper.

Top the salmon with sliced lemons and dill.

Place the plank across the center of the grill once the coals reach 350-400 degrees Fahrenheit.

Lower the lid and let the grill cook the salmon for about 25 minutes for a pound and a half piece.
