Tuna, Potato and Pesto

Peel the new potatoes (optional).

Put a large saucepan onto high heat and add boiling water from the kettle.

Once the water is boiling, add in the potatoes and boil until they can fall from a fork (about 5-10 minutes).

Remove from heat and drain through a colander. Set aside to cool down.

Preheat the oven to 180°C and place the baking tray in the oven.

When the oven is preheated, carefully remove the baking tray and add in the cooked potatoes. Drizzle oil over the top and toss the potatoes in the oil.

Put the tray back into the oven and cook for about 25-30 minutes or until golden brown.

Once the potatoes are golden brown, remove them from the oven and place them into a large mixing bowl.

Open the tinned tuna and drain the water or oil. Add the tuna and pesto to the mixing bowl.

Gently fold all the ingredients together using a serving spoon. Serve with salad or green beans and enjoy.
