Transfer shredded beef into an empty bowl.
Season shredded beef with oyster sauce, cayenne pepper, onion powder, garlic powder, and cornstarch. Mix together and allow to marinate for 30 minutes.
Heat a small amount of canola oil in a pan over low heat.
Stir fry the marinated shredded beef until it turns from pink to brown, tasting to ensure it is properly cooked. Set aside.
In a clean pot, add a little oil and sauté chopped onions until translucent.
Add fresh scotch bonnet and cook for 2-3 minutes until the onion flavor releases into the oil.
Add garlic powder and then the bell peppers (and carrots if using). Stir fry on low heat until cooked.
Add the previously cooked shredded beef to the vegetable mixture and stir fry, adding more oyster sauce to taste.
In another pan, heat butter and sauté onions until soft.
Scramble eggs in the pan until fully cooked, using a whisk to mix.
Add pre-cooked rice to the scrambled eggs, seasoning with salt, and stir fry until well combined and the rice is dry.
