Chicken Asado

1 kg chicken, cut into pieces
1/4 cup soy sauce
1/4 cup vinegar
1/4 cup water
1/2 cup onion, chopped
4 cloves garlic, minced
1/2 tsp black pepper
1/2 tsp salt
2 bay leaves
1/4 cup cooking oil
1/2 cup carrots, sliced
1/2 cup potatoes, cubed
1/2 cup bell peppers, sliced

In a bowl, combine soy sauce, vinegar, water, black pepper, and salt. Add the chicken pieces and marinate for at least 30 minutes.

In a large pan, heat the cooking oil over medium heat. Add the chopped onions and minced garlic, sauté until fragrant.

Add the marinated chicken to the pan, including the marinade. Cook until the chicken is browned on all sides.

Add the bay leaves, carrots, potatoes, and bell peppers to the pan. Stir to combine.

Cover the pan and let it simmer for about 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.

Adjust seasoning if necessary, and remove the bay leaves before serving.
