Chicken Asado

1 kg chicken legs and thigh
1 head garlic
¼ cup soy sauce
½ tsp ground pepper
3 tbsps brown sugar
1 tbsp vinegar
2 pcs bay leaves
3 tbsp oil for searing
1 tbsp oil
1 medium onion
150 gms tomatoes
70 gms tomato paste
2 star anise
½ tsp salt
½ cup water
1 tbsp kalamansi juice

Marinate the chicken legs and thighs with garlic, soy sauce, ground pepper, brown sugar, vinegar, and bay leaves.

Heat 3 tablespoons of oil in a pan and sear the marinated chicken until browned.

Remove the chicken and set aside.

In the same pan, add 1 tablespoon of oil, then sauté the onion, tomatoes, and tomato paste.

Add the seared chicken back to the pan along with star anise, salt, and water.

Cover and simmer until the chicken is cooked through.

Finish with kalamansi juice before serving.
