Chicken Asado

2 lbs chicken thighs
1 large onion, chopped
7 cloves garlic, chopped
4 small bell pepper, cubed
2 cups chicken broth or water
2 tbsp tomato paste
3 dried bay leaves
1 tbsp brown sugar
1/2 tsp salt
1/4 tsp pepper
3 tbsp oil
3 tbsp soy sauce
3 tbsp oyster sauce
2 tsp vinegar
7 cloves garlic, minced

In a large bowl combine chicken and marinate ingredients. Stir until well combined. Let it marinate for at least 30 mins. Set aside.

Remove chicken from the marinade then reserve the marinade.

In a pan or wok, heat 3 tbsp oil over medium high heat.

Sear chicken until browned. Cook chicken by batch. Remove from the pan then set aside.

Drain oil leaving only 2 tbsp.

Add onion, sauté until translucent.

Add garlic, sauté until lightly browned.

Stir in the marinade. Bring to boil for 5 mins.

Add tomato paste, stir until well combined.

Add chicken broth or water, dried bay leaves and brown sugar. Stir until sugar dissolves.

Add salt and pepper. Stir until well combined.

Add back the chicken. Cover with lid and let it simmer for 20 mins. Stir occasionally.

Add bell peppers. Cover with lid and let it simmer for 5 mins.

Remove the lid and continue to simmer uncovered over medium heat until it reaches your preferred consistency.
