Preheat oven to 350°F (175°C).
Cut beef into bite-sized pieces.
Season beef with salt and pepper.
Heat butter in a large pot over medium heat until melted.
Add beef in batches, browning on all sides, about 5-7 minutes.
Remove beef and set aside; add onions, carrots, and potatoes to the pot.
Cook vegetables until softened, about 5 minutes.
Add garlic and cook for another minute until fragrant.
Sprinkle cornstarch over the vegetables and stir to combine, cooking for 2 minutes.
Add tomato paste, Worcestershire sauce, and crumbled beef stock cube, scraping up any browned bits from the bottom.
Add thyme, bay leaves, and browned beef back to the pot.
Bring to a simmer, cover, and cook until beef is tender.
Remove bay leaves and stir in any additional ingredients as needed; cook for another 10 minutes.
Transfer beef mixture to a pie dish and let cool slightly.
Roll out puff pastry and cover the pie dish, sealing the edges.
Cut slits in the pastry for steam to escape.
Brush the pastry with beaten egg for a golden finish.
Bake in the preheated oven for 30-35 minutes until golden brown.
