Tagliamo il cipollotto e continuiamo con gli spinaci e le biete.
Versiamo un giro d'olio in una pentola e mettiamo tutte le verdure che abbiamo tritato.
Aggiungiamo un giro di sale cosรฌ da far uscire i succhi delle verdure.
Dopo 5 minuti andiamo ad aggiungere abbondante acqua.
La cottura deve continuare per altri 10 minuti.
A questo punto mettiamo l'uovo, immergendolo nell'acqua.
Impiattiamo e gustiamolo con un crostone di pane tostato.
