Clean and rinse the beef tripe under cold water.
Cut the tripe into thin strips or bite-sized pieces.
In a large pot, simmer the beef broth over medium heat.

In a separate pan, melt butter over medium heat.
Sauté chopped onions, carrots, and celery until softened, about 5-7 minutes.
Add minced garlic and cook for another minute until fragrant.
Stir in flour and cook for 2 minutes to create a roux.
Gradually add the roux to the simmering broth, stirring to combine.
Season with bay leaves, allspice, black pepper, marjoram, and salt.
Simmer for an additional 30 minutes to blend flavors.
Adjust seasoning with vinegar and more salt if needed.
Serve hot, garnished with chopped parsley.
