Cultural Context
Originating from the Russian Orthodox tradition, these Easter desserts are integral to the celebration of Pascha, marking the end of Lent. Kulich, a rich, sweet bread, and Paskha, a creamy dessert, symbolize joy and abundance, often adorned with religious symbols. Today, these treats are cherished not only in Russia but also among Eastern European communities worldwide, each adding their unique twist to the recipes.

Warm milk to lukewarm.
Add sugar, fast-action dry yeast, and about 2 tablespoons of flour to the milk and let it activate.
In a bowl, add melted butter, vanilla extract, eggs, and the activated milk and yeast mixture.
Add flour to the mixture and combine until a dough forms.
Knead the dough on a floured surface until soft.
Place the dough back into a bowl greased with vegetable oil and let it rise until doubled in size.
Roll out the dough on a floured surface and spread poppy seed filling on top, leaving edges clear.
Roll the dough up from one side to the other into a sausage shape and cut into equal pieces.
Place the pieces on a baking tray and let them rise for about 30 minutes.
Brush the risen dough with egg wash and apricot glaze before baking.
Melt dark chocolate and unsalted butter together in the microwave in 30-second intervals until smooth.
Coat the inside of molds with a thin layer of the melted chocolate and freeze for 5-10 minutes.
Apply a second coating of melted chocolate to the molds and freeze for 20 minutes.
Make the cottage cheese filling by mixing dry cottage cheese, butter, vanilla extract, and condensed milk until smooth.
Fill a piping bag with the cottage cheese mixture.
Pipe the filling into the chocolate-coated molds and freeze for 1-2 hours.
Remove the molds from the freezer and coat with more melted chocolate to seal the ends.
Wrap the filled desserts in cling film and store in the freezer for up to three months.
Decorate the plate with melted chocolate and fresh berries before serving.
