Cut beef sirloin into 1.5-inch cubes, leaving some fat for flavor.
In a bowl, combine 1/4 cup fresh lemon juice, 1/2 cup balsamic vinegar, 3-4 grated garlic cloves, 2 heaping teaspoons dried oregano, and 1/2 cup olive oil.
Season with 1.5 teaspoons salt and black pepper, adjusting to taste.
Pour marinade over beef cubes and mix well, letting it sit at room temperature for 1 hour or refrigerate overnight.
Cut green bell peppers and red onion into pieces similar in size to the meat.
Thread beef and vegetables onto flat skewers, alternating as desired.
Preheat grill until piping hot.
Grill skewers for 2-3 minutes on each side, flipping until cooked to desired doneness.
Baste skewers with reserved marinade while grilling, avoiding raw juices.
Remove skewers from grill and let rest for 5 minutes before serving.
Serve with tzatziki sauce.
