Poached Egg with Grilled Kippers

4 large eggs
2 kippers (smoked herring)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped
1 lemon, cut into wedges

Fill a large saucepan with water and bring it to a gentle simmer.

Crack each egg into a small bowl, being careful not to break the yolk.

Create a gentle whirlpool in the simmering water and carefully slide each egg into the water.

Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.

While the eggs are poaching, heat a grill pan over medium heat and brush it with olive oil.

Place the kippers on the grill pan, skin side down, and grill for about 3-4 minutes until heated through and slightly crispy.
