1

Place an inch of water in a steamer pan and add salt and whole lemons that are not being used.

2

Place the kippers skin side down in the steamer.

3

Bring the water to a boil and then simmer for about 5 minutes to steam the kippers.

4

In a separate pan, melt a large knob of unsalted butter over high heat and add a little salt and black pepper.

5

Add lemon juice and chopped flat leaf parsley to the melted butter and mix well.

6

For poaching the eggs, ensure the water is really hot, then bring it to a simmer and add a couple of tablespoons of vinegar.

7

Crack each egg into a cup and then lower the cup into the simmering water to poach the egg.

8

Prepare toast without butter, as the butter will come from the kippers and the lemon parsley butter.

9

Once the kippers are done, place them on the toast and pour the lemon parsley butter over the kippers.

10

Add the poached egg on top of the kippers and toast, and garnish with slices of tomatoes.
