320 g sifted all purpose flour
210 g salted/unsalted butter
180 g powdered / castor sugar
Water as required to make a semi thick sugar glaze
1-2 drops strawberry essence (optional) or vanilla essence

Add the soft butter into the all purpose flour.

Mix the butter uniformly with the flour & once all come together, knead until you obtain a soft dough.

Once you obtain soft dough, pop it in the fridge for 10-15 mins until it hardens a little bit.

After 15 mins, you can start rolling out the dough.

If you find the dough sticking to the rolling pin or board, you can sprinkle little bit of flour.

Once you get a thickness of about 0.5 cm, you may start cutting out circles out of the dough.

You may cut out small bigger or smaller sized napolitaine depending on your preference.

Place the napolitaines onto a baking tray lined with baking paper or parchment paper.

Repeat the same process with the leftover dough.

Bake in a preheated oven at 180 degree Celsius for 15-20 mins.

After 20 mins, napolitaines are baked!!

If you want them to have a more golden colour, you may let them bake for few more mins in the oven.

Bake the other batch similarly.

Once baked, allow the cookies to cool down completely.

Add the strawberry essence to the powdered sugar followed by 1-2 tsp water & add in the food colour.

Mix and add water little by little until you get a semi thick sugar glaze.

Spread the jam over one side of the biscuit/cookie leaving some space on the borders to prevent the jam from squeezing out once you place another cookie on top.

Once you have the jam filled biscuit ready, we can now pour the sugar glaze on top.

Allow the glaze to set & dry for about 4-5 hrs or overnight at rtp.
