Instructions

- 8Slice the onion and bell pepper, then add them to the sheet pan.
- 9In a small bowl, mix balsamic vinegar, mustard, and lemon juice; brush this mixture over the pork.
- 10Roast in the preheated oven for 25-30 minutes, until the pork reaches an internal temperature of 145°F (63°C).
- 11Stir the vegetables halfway through roasting for even cooking.
- 12Remove the pan from the oven and let the pork rest for 5-10 minutes before slicing.
- 13Serve the sliced pork alongside the roasted vegetables.
