These soft, chewy morsels are traditionally served with mustard or cheese dip, making them a perfect companion for social gatherings. Today, pretzel bites have gained popularity worldwide, appearing at sporting events and casual parties.

Nutritional yeast offers a cheesy flavor with fewer calories.
Add 1 1/2 cups of warm water (between 110 and 120 Fahrenheit) to the bowl of a stand mixer.
Add 1/4-ounce packet of active dry yeast to the warm water and 1 1/2 tablespoons of light brown sugar. Stir and let sit for 5 minutes until frothy.
After 5 minutes, add 3 cups of all-purpose flour (360 grams) and 2 teaspoons of salt to the yeast mixture.
Add 2 tablespoons of melted unsalted butter to the bowl.
Mix on low speed with a paddle attachment for about 1 minute until the mixture is shaggy.
Switch to a dough hook and add 1 3/4 cups of flour (210 grams) a little at a time until the dough pulls away from the bowl.
Mix on low for about 5 minutes to develop gluten until the dough is soft and stretchy.
Perform the window pane test by stretching a piece of dough to see if it becomes translucent. If it breaks too soon, mix for another 90 seconds.
Once the dough passes the window pane test, transfer it to a lightly oiled bowl, cover with a damp towel, and let rise for about 1 hour until doubled in size.
After the dough has risen, preheat the oven to 425°F and bring 3 quarts of water to a boil in a large pot.
Lightly flour the work surface and dump the dough out. Divide it into four equal portions.
Roll each portion into 22-inch-long rolls, using gravity and gentle rolling.
Cut the rolled dough into 1 1/2 inch pieces with a bench scraper.
Once the water is boiling, prepare a baking soda bath for the pretzel bites.
