1/2 tbsp - 8g Brown Sugar (packed)
3/4 cup - 170ml Warm Water (110F)
1/2 tsp - 3g Salt
1 tbsp - 15g Butter (Melted)
2 cups - 240g Flour
1 unit - 50g Egg
2 tsp - 10ml Water
3 cups - 680ml Water
1/4 cup - 70g Baking soda
2 tbsp - 30g Butter (Melted)
3 tbsp - 35g turbinado sugar (or regular)
1/2 tsp - 2g salt

Add the yeast to the water and let it activate for 3 minutes

In your stand mixer fitted with the hook add the flour, the sugar, the salt and the yeasted water.

Start mixing so all the ingredients come together

Knead for 5 minutes or until the dough doesn't stick to the sides anymore

Place the dough inside an oiled bowl.

Cover & let it rise for 45 minutes in a humid and warm place

When the dough has doubled in size separate it in 3 pieces

Roll each piece into 20-22 inch

Cut each piece into 20 bite-sized pretzel dough

Mix water and baking soda in a large bowl.

Add 20 dough pieces at a time to the bowl and let them sit in the water for about 30 seconds.

Take the dough pieces out of the water and place them on a baking tray.
