Heat sunflower oil in a pan over high heat.
Add black mustard seeds and cumin seeds; cook until they start to pop.
Add sliced red onion and garlic ginger paste; stir-fry for 2 minutes.
Add sliced tindora to the pan; stir-fry for 3 minutes with a lid on, adding a little cold water.
Add salt to taste; mix well.
Stir in turmeric powder, red chili powder, cumin, and coriander; cook for another 2 minutes until dry.
Remove from heat and sprinkle with fresh coriander.
