Prepare a double boiler by adding a little bit of water to a pot, ensuring it doesn't touch the bottom of the bowl.
Set the heat to medium-low and add 2 tablespoons of unsalted butter to the bowl.
After about 2-3 minutes, stir the mixture until the chocolate and butter melt slowly.
Once melted, remove from heat and add 1 cup of graham cracker crumbs, 1 cup of sweetened coconut flakes, and 1/2 cup of chopped walnuts, stirring until well combined.
Transfer the mixture to a lightly greased 8x8 baking dish and spread it evenly over the bottom, using a glass or metal measuring cup to press down gently.
Place the baking dish in the fridge for 30 minutes to set the base layer.
In a large bowl, combine 1 cup of powdered sugar, 1/4 cup of unsalted butter, 1 tablespoon of cornstarch, 1 teaspoon of pure peppermint extract, 1/4 teaspoon of ground sea salt, and 1 tablespoon of milk.
Add green food coloring until satisfied with the color and beat the ingredients until nicely blended.
Take the baking dish out of the fridge and spread the peppermint filling evenly over the base layer using a spatula.
Return the dish to the fridge for another 30 minutes to set the filling layer.
Prepare the top layer by setting up the double boiler again on medium-low heat.
Add 1 cup of dark chocolate chips, 1/2 cup of mint chocolate chips, 1/4 cup of unsalted butter, and 1 teaspoon of pure vanilla extract to the bowl.
Stir the ingredients until they are slowly melting, then remove from heat.
Quickly pour the melted chocolate mixture over the chilled peppermint filling while it's still hot, leveling it with an angled spatula.
Transfer the dish back to the fridge for 15 minutes before serving.
