Preheat the oven to 375°F (190°C).
Heat oil in a large skillet over medium heat until shimmering.
Add chopped onion, garlic, carrot, and celery; sauté until softened, about 5-7 minutes.
Stir in minced beef and pork, cooking until browned, about 8-10 minutes.
Add fresh thyme, sage, mustard powder, cloves, Worcestershire sauce, and beef stock; simmer for 15 minutes.
Remove from heat and let the mixture cool slightly.
Roll out shortcrust pastry and line a pie dish, leaving some overhang.
Fill the pastry with the meat mixture, packing it down gently.
Roll out another piece of pastry to cover the pie; seal the edges by crimping with a fork.
Cut a few slits in the top pastry to allow steam to escape.
Brush the top with a mixture of egg and milk for a golden finish.
Bake in the preheated oven for 30-35 minutes, until the pastry is golden brown.
Remove from the oven and let it rest for 10 minutes before serving.
