Crush 2 cups of graham cracker crumbs (about a sleeve and a half to two sleeves) using a food processor or by hand.

Mix the crushed graham crackers with 1/4 cup of light brown sugar and 1 stick of melted unsalted butter until well combined.

Press the mixture into a greased springform pan using the back of a spoon or the bottom of a glass to create an even layer.

Freeze the crust for 30 minutes to make layering easier.

Zest one whole orange until all the zest is removed.

Mix 3 oz of orange gelatin mix with 3/4 cup of boiling water and the orange zest until smooth. Let it cool for 15 to 20 minutes without letting it set up.

In a mixing bowl, combine 2 packages of cream cheese, 3/4 cup of white sugar, and 1 teaspoon of vanilla extract. Cream together until smooth and fluffy.

In another bowl, whip 16 oz of heavy whipping cream with 1/2 cup of confectioners sugar and 1 teaspoon of vanilla extract until stiff peaks form.

Fold half of the whipped cream into the cooled orange gelatin mixture until smooth.

Fold the other half of the whipped cream into the cream cheese mixture until well combined.

Layer the cheesecake by spreading half of the cream cheese mixture over the chilled crust, then half of the orange mixture, followed by the remaining cream cheese mixture, and finally the remaining orange mixture on top.

Cover the cheesecake and refrigerate overnight to set. If in a hurry, freeze for about 30 minutes and then refrigerate for several hours.
