  • 1 cup coconut yogurt
  • 1/2 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a mixing bowl, combine the coconut yogurt and grated cucumber.
  2. 2Add the minced garlic, chopped dill, lemon juice, salt, and black pepper to the bowl.
  3. 3Mix all the ingredients together until well combined.
  4. 4Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
  5. 5Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. 6Serve chilled as a dip with pita bread or fresh vegetables.

  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 tbsp olive oil
  • 1/4 cup all-purpose flour (or gluten-free flour)

Instructions

  1. 1In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, black pepper, and cayenne pepper (if using).
  2. 2Pulse the mixture until it is well combined but still slightly chunky. Do not over-process.
  3. 3Transfer the mixture to a bowl and stir in the flour until fully incorporated.
  4. 4Cover the bowl and refrigerate the mixture for at least 30 minutes to help it firm up.
  5. 5Preheat your air fryer to 375°F (190°C).
  6. 6Form the chickpea mixture into small balls or patties, about 1-2 inches in diameter.
  7. 7Lightly brush or spray the falafel with olive oil to help them crisp up in the air fryer.
  8. 8Place the falafel in the air fryer basket in a single layer, making sure they are not touching each other.
  9. 9Air fry the falafel for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.
  10. 10Remove the falafel from the air fryer and let them cool slightly before serving.
