Rinse 2 cups of long grain white rice to remove starch.

In a medium saucepan over high heat, add the rinsed rice and 4 cups of chicken stock.

Dice 1 yellow onion, 1 stalk of celery, 1 green bell pepper, and 1 clove of garlic.

Slice 14 ounces of andouille sausage.

In a large pot over medium heat, add 2 tablespoons of canola oil and let it heat up.

Add the sliced andouille sausage to the pot and let it brown for about 6 minutes.

Once browned, add the diced onion, celery, green bell pepper, minced garlic, and 1 cup of chicken stock to the pot.

Add 1 bay leaf, 1 teaspoon of cayenne pepper, 1/2 teaspoon of ground thyme, 1/4 teaspoon each of onion powder and garlic powder, and kosher salt and white pepper to taste.

Stir the mixture and let it cook until the liquid reduces down for about 7 minutes.

Remove the pot from the heat and stir in the cooked rice until every grain is coated in the sausage mixture.

Transfer the dirty rice to a large bowl and add chopped green onions for garnish.
