Remove the membrane from the back of the ribs; trim a little fat off the ribs as needed.

Apply a thin layer of mustard as a binder on the ribs.

Sprinkle a medium coat of garlic jalapeno rub on the ribs and pat it in.

Sprinkle a layer of competition barbecue rub on top of the garlic jalapeno rub and pat it in.

Flip the ribs over and repeat the mustard, garlic jalapeno rub, and competition rub process on the other side.

Preheat the Smoking Brothers Premier Vertical grill to 300°F.

Place the ribs on the grill and close the door.

Set a timer for 2 hours to check the ribs and wrap them at 2.5 hours if the rub is set.

After 2 hours, check the ribs; if the rub is stuck, prepare to wrap them.

Pour 3/4 cup of apple juice into a container for two slabs of ribs, then seal the container and shake it up.

Wrap the ribs in foil with the apple juice and place them back on the grill for 1 hour.

After 1 hour of wrapping, check the ribs for tenderness; they should be done when the bone marrow pushes out and the meat is tender.

Let the ribs rest for a while to allow the juices to redistribute before glazing them.
