Seafood Chowder

1 pound bacon
1 cup leeks
1.5 to 2 cups onions
2 cups chopped celery
1.5 cups carrots (frozen)
1.5 pounds potatoes
4 bottles clam juice (8 oz each)
3 bay leaves
1 tablespoon dried thyme
0.5 cup flour

Render 1 pound of chopped bacon in a large pot over medium-high heat until crispy, about 8-10 minutes.

Add 1 cup of leeks, 1.5 to 2 cups of onions, and 2 cups of chopped celery to the pot and sauté until vegetables are wilty.

Add 1.5 cups of carrots (fresh or frozen) and sauté until mixed well with other vegetables.

Season with salt and black pepper to taste.

Add 3 bay leaves and 1 tablespoon of dried thyme to the pot.

Stir in 0.5 cup of flour and let it cook for a couple of minutes to remove the raw flour taste.

Add 1.5 pounds of diced potatoes and mix well.

Pour in 4 bottles of clam juice (8 oz each) and mix thoroughly.

Reduce heat and let the mixture simmer.
